Gold Beet Salad

Ingredients:

1 bunch of gold beets
3 tbsp olive oil
3 tbsp chopped parsley
3 tbsp chopped sweet onion
3 tbsp feta cheese, crumbled
3 tbsp lemon juice
1/2 tsp sugar
salt & pepper to taste

Directions

Cook beets in boiling water until tender. When they are done, cool in cold water and peel. Cut into thin slices or dice into cubes. Add remaining ingredients. Chill up to 4 hours before serving.
